Piri piri chicken is butterflied chicken marinated in a sauce of African bird’s-eye chilies, garlic, lemon, and oil, then grilled over charcoal until the skin blisters. The name tells you exactly what to expect: “piri piri” means “pepper pepper” in Swahili, a doubling that signals serious heat. The dish grew out of the long encounter between Portuguese cooking and southeastern African ingredients, and today it is eaten everywhere from Maputo street grills to lunch counters in Lisbon. One bite delivers smoke, citrus, and a chili burn that builds slowly.

A short history

Chili peppers are not native to Africa. Portuguese traders carried them from the Americas in the late 1400s and 1500s, and the small, fierce bird’s-eye variety took to the soil of southeastern Africa so well that it gained its own Swahili name. In the Portuguese colonies of Mozambique and Angola, cooks began pounding the chilies with garlic, citrus, and oil into a marinade for grilled chicken. Who perfected it first is a friendly argument with no referee: Mozambique, Angola, and Portugal all claim the dish, and each prepares it a little differently. In 1987, a restaurant called Nando’s opened in Johannesburg and carried piri piri chicken to high streets around the world.

What’s in it?

The heart of the dish is the piri piri sauce: African bird’s-eye chilies blended or pounded with garlic, lemon juice or vinegar, oil, salt, and often paprika and bay leaf. Some cooks work in red pepper paste or oregano; coastal Mozambican versions sometimes mellow the heat with coconut milk. Heat ranges from gentle to fierce, depending on the cook. The chicken itself is usually a whole bird, spatchcocked (split down the backbone and flattened) so every part cooks evenly over the coals. Half the marinade flavors the raw chicken; the rest becomes a basting and table sauce.

How do you eat it?

Piri piri chicken is casual food, best eaten with your hands. In Mozambique it comes off roadside charcoal grills with fries, rice, or a simple salad, plus extra sauce for the brave. In Portugal, churrasqueiras (charcoal grill houses) serve it cut into quarters with the same sides. A squeeze of fresh lemon over the top is standard before digging in. The burn is meant to build through the meal, so keep a cold drink nearby and pace yourself. If your fingers stay clean, the general consensus is that you are doing it wrong.
